replacing iceberg lettuce in fast food meals with spinach could
significantly improve daily nutrient intake without affecting flavor.
Researchers at the University of Arkansas in Fayetteville say the
switch leads to far greater quantities of key nutrients, such as
vitamin C, vitamin A and folic acid. The scientists studied 40 volun-
teers with a blind taste-test involving three half-burgers. Some
sub- jects received two halves with lettuce and one half with spinach,
while others had two halves with spinach and one half with lettuce.
The participants weren't told what they were tasting for. Survey
results indicated that no one seemed to suspect that the lettuce
was tampered with. Comments instead ranged from "too much onion"
to "I don't like hamburgers." "We've proven that
consumers can't taste the difference between spinach and lettuce
in fast food, so there's no reason not to be using it," said
researcher Marjorie Fitch-Hilgenberg. "Even a 50/50 blend of
lettuce and spinach would provide a significant boost of nutrients." |
