Ingredients:


6 - brains lamb
1\2 teaspoon turmeric (haldi)
2 tablespoon garam masala
1 teaspoon red chili powder
1 teaspoon garlic paste
1 teaspoon ginger paste
1 medium onion, finely chopped
1 teaspoon salt
2 small tomato finely chopped
1\4 cup oil
3 tablespoons coriander leaves, chopped
- 1inch piece ginger, cut into matchstick
2-4 - green chilies, thinly sliced


How to Prepare:


Bring 2 cups of water to boil in a medium saucepan, add turmeric powder and brain. Bring to a rapid boil and simmer for 3 minutes. Remove brain from water with a slotted spoon and place in a colander. Discard water. Heat oil in a medium saucepan, add onions and fry until light brown, about 5-8 minutes. Add garlic and ginger paste, stir once, add chili powder, coriander powder, garam masala powder and salt. Add 3-4 tablespoons of water and stirring frequently fry for 3-5 minutes, add little more water if the mixture sticks to the bottom of the pan. ? Add tomatoes and cook for 5 minutes or until tomatoes are reduced to pulp. Add brain and cook for 5 minutes, while cooking stir constantly to break brain into small pieces. Add ginger, green chilies and coriander leaves. Cook for about 3 minutes. Now brain masala is ready to serve. Serve hot with Nan or Roti.
