Ingredients:
Onions 4 pieces ( finely chopped)
5 tomatoes (chopped into small pieces)
yogurt one small cup
2 tea spoon red chili powder
2 teaspoon turmeric powder
Salt to taste
1 ½ teaspoon Black cumin
Hot spice powder 1 teaspoon
Few pieces of cloves, caradomn, Cinnamon sticks
Bay leafs, black caradomn (whole spices)
Ginger and garlic paste
Food Colors (optional)
Rice 4 cups
Oil one cup |
How to Prepare:
Put oil into a saucepan, add chopped onions and
fry them until little golden brown. Add pieces of
mutton and fry them for 4 to 5 minutes. Then put
salt, chili powder,turmeric powder, whole spices
, ginger and garlic paste , and rest of all the
spices. Add 3 cups of water for tendering the meat.
Let it cook for half an hour. When the meat is almost
tender then put tomatoes and yoghurt into the mixture.
Cook it for another 3 to 4 minutes. Take a seperate
saucepan and boil the rice to half cook and drain
the water (rice should not be very soft). Now you
have to use the same pan in which you had boiled
the rice (must be empty) and put one layer of the
rice on the bottom of the pan. Then put the mixture
of the meat on top of the rice and again cover it
with another layer of rice. Continue this processor
until the rice and the micture are finished. Now
put some fresh chopped coriander and mint leaves,
few drops of lemon juice, mixture of food color
on top of the rice ( for garnishing), Cook over
moderate heat for about 3 to 4 minutes unit rice
is completly cooked. Now Briyani is ready, serve
it with vegetable salad & yoghurt.
